Served on a banana leaf during feasts, avial occupies a place between curry and vegetable side. Its many vegetables suggest abundance, while its seasoning remains deliberately quiet.

Families vary the souring agent between yoghurt, raw mango, and tamarind. The final drizzle of coconut oil and torn curry leaves is essential to its aroma.

A recipe shaped by season

There is no single fixed vegetable list. Yam, ash gourd, raw banana, carrots, beans, cucumber, and drumstick enter according to place and season.

    Cook in layers

    Start the firmest vegetables with turmeric, salt, and a splash of water; add tender vegetables later.

    Grind the coconut

    Pulse coconut, cumin, and chillies to a coarse paste that still has texture.

    Bring it together

    Fold the paste into the vegetables, lower the heat, and gently add yoghurt without boiling.

    Finish with aroma

    Turn off the heat and fold in coconut oil and torn curry leaves before resting.
