Instructions

  1. 01

    Render the pork

Place the pork in a heavy pot over medium heat and cook until its fat renders and the edges begin to brown.

  2. 02

    Cook the aromatics

Add onion, ginger, bay leaves, and black pepper. Cook in the rendered fat until the onion softens.

  3. 03

    Toast the rice

Add the drained rice and stir for 2–3 minutes so every grain is coated in the savoury fat.

  4. 04

    Cook gently

Add hot water or stock and salt. Bring to a boil, cover tightly, and cook over low heat until the rice is tender.

  5. 05

    Rest and fluff

Turn off the heat and rest, covered, for 10 minutes. Fluff gently and scatter with spring onion greens.

Serving Suggestions

  • Serve hot with a simple salad, pickled bamboo shoot, or tungrymbai.
